1) Preheat oven to 200°C and bring a large pan of water to the boil. Put the potatoes in the pan and boil for 3 minutes, then add the pumpkin and parsnip. Boil for 2 minutes and drain.
2) Put the vegetables in the oven dish, add half the oil and onion, stir and season. Roast in the oven for approx. 20 minutes.
3) Stir the rest of the oil with the falafel balls and add to the oven dish on top of the vegetables. Roast for another 20 minutes. Sprinkle the cheese over the oven dish and return to the oven for 5 minutes to melt.
4)Serve the falafel balls with the oven dish. Sprinkle with parsley and serve.
